Loach Drilling in Tofu

ZJJ Loach Drilling in Tofu is one of Tujia people’s favorite dishes. The first cooking step is to put small loaches in a pot with clear water and small quantity of salt and feed it for one night to clear out sand and impurities in loaches’ stomach. Then wash them and put alive loaches into tender tofu to let them bore as they like. After there are several small hole bored by them, put them in oil pan and then boil them. Finally,Sichuanpeppercorn, chopped green onion, gourmet powder, ginger, soy sauce and so on can be added into the dish.

This dish is a very notorious, fresh, tender and precious dish which is often made to welcome guests. No regret will be left if you have chance to taste it!
