There are a great number of wild honeybees in the mountain district of Zhangjiajie. Among these wild honeybee species, Lei Honeybee is as big as a thumb in size, very toxic, but so nutritious that it becomes the raw material of one of Tujia people’s favorable dishes.

Cooking Directions: Heat the oil till boiling, put the honeybee pupae into the oil and do not take them out until they float to the surface of the oil. Then put them into a clean pot, add salts, green onion, bruised ginger, chili, and peppers into the spot, and stir-fry them for 1 to 2 minutes.

This dish tastes delicious and crisp and goes well with wine, based on which it is typically used to treat guests coming from far.
