Steamed Fish Head with Diced Hot Red Peppers

Main ingredient: Fish head;

Other ingredients: Bamboo shoot, Black fungus, Garlic sprouts’ leaves red peppers, Streaky pork, Green onion and Ginger;

Flavorings: Salt, Gourmet powder, Sugar, Thick chili sauce, Red camphor oil, Salad oil and Clear soup.

Cooking methods:

1.Clean up the fish head and dry the water in fish head with kitchen napkin.

2.Put green onion, carved ginger, cooking wine in the fish head and paint the fish head with salt inside and outside. Then, cure the fish head for about 10 minutes.

3.Mix chopped red peppers evenly with white spirit.

4.Put the pickled fish head with fishskin upward. Then, put peppers on it evenly. After that, put the fish head into steam box and keep steaming for about 8 minutes.

5.Take out the steamed fish head and decant excessive water. Scatter chopped green onion.

6.Pour vegetable oil and sesame oil into pot. Then, pour the oil in fish head after the oil is heated.
